Listen carefully, and you know life is meant to be. Sayan Isaksson is head chef and owner of Michelin-starred Esperanto in Sweden, also one of the World’s 50 Best Restaurants. He’s soft-spoken, to put it mildly. Even in the hushed interiors of the Mandarin Grill, I strained, and still barely caught a word. Isaksson was born Thai and raised in Sweden upon his adoption by a Swedish family at eight months old. His cooking style is gentle and unassuming, with a quiet depth not unlike his smile.
